The Fermenters Guild Symposium 2026

The first day of our 2026 event brought together the legendary Sandor Katz, with some of the UK’s leading fermenters, chefs, authors, scientists and educators including Dr Johnny Drain, Chef Sam Black, Olia Hercules and Kenji Morimoto.

Our host for the evening was Dr Neil Buttery, award-winning Author, Historian and Podcaster.

The full 2-day programme included a live theatre demo from Sandor Katz, panel discussions, a ferment feast, 2 in-depth, unique masterclasses on Koji and Mould Fermentation led by Sandor Katz and Haruko Uchishiba and direct access to leaders in fermentation’s revival and future.
